  • 1 ½ lbs ground beef or turkey
  • 1 large sweet onion, finely chopped
  • 2 cloves garlic, minced
  • 3 cups low-sodium beef broth
  • 1 (6-ounce) can tomato paste
  • 2 (10-ounce) cans diced tomatoes with green chilies
  • 1 (14.5-ounce) can fire-roasted diced tomatoes
  • 1 (15.5-ounce) can dark red kidney beans, drained and rinsed
  • 1 (15.5-ounce) can pinto beans, drained and rinsed
  • 3 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 tablespoon brown sugar
  • ¼ teaspoon red pepper flakes
  • ⅛ teaspoon ground cayenne
  • kosher salt and black pepper to taste

Instructions

  1. Brown the ground beef in a large skillet over medium heat. Halfway through cooking, add the chopped onion until softened. Stir in minced garlic for one minute.
  2. Drain excess grease and transfer the mixture to your slow cooker.
  3. In a bowl, whisk together beef broth and tomato paste until smooth; pour over the meat mixture.
  4. Add diced tomatoes, fire-roasted tomatoes, drained beans, and spices to the slow cooker; mix well.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Season with kosher salt and black pepper before serving hot.
