  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 4 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon chili powder (optional)
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup plain yogurt

Instructions

  1. Prepare your ingredients by chopping the onion, mincing the garlic, and grating the ginger.
  2. In a pan over medium heat, heat vegetable oil. Sauté the onion until translucent (about 5 minutes). Add garlic and ginger; cook for another minute until fragrant.
  3. Stir in curry powder, cumin, paprika, cinnamon, and optional chili powder to coat the onions evenly.
  4. Transfer the sautéed mixture to a slow cooker and place the lamb on top.
  5. Pour diced tomatoes over the lamb and mix well.
  6. Cook on low heat for about 6-8 hours or until the lamb is tender.
  7. Stir in plain yogurt before serving to add creaminess.
