  • 2 lbs ground beef
  • 1 red bell pepper, finely chopped
  • 1 small red onion, finely chopped
  • 2 cloves garlic, minced
  • ¾ cup Italian-style breadcrumbs
  • ½ cup grated parmesan cheese
  • 2 eggs
  • ¼ lb deli chicken
  • 1215 large fresh basil leaves
  • 1 ¼ cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 350°F.
  2. Sauté onion and bell pepper in olive oil until tender, then add minced garlic.
  3. In a large bowl, combine ground beef, sautéed vegetables, breadcrumbs, parmesan cheese, eggs, tomato paste, salt, pepper, and parsley.
  4. Shape the mixture into a rectangle using parchment paper; layer with chicken, basil leaves, and mozzarella.
  5. Roll up tightly using the parchment paper for support and seal the edges.
  6. Bake on a lined baking sheet for about one hour until cooked through.
  7. Rest for ten minutes before slicing and serve with marinara sauce over pasta or zucchini noodles.
