  • 1/2 cup diced red onion
  • 2 pounds shrimp (deveined)
  • 12 corn tortillas
  • 3 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons fresh lime juice
  • Salt and pepper (to taste)
  • Cilantro Lime Crema (Mexican Crema or Sour Cream)
  • Avocado or Guacamole
  • Pico De Gallo
  • Cilantro
  • Jalapeños
  • Lime Wedges

Instructions

  1. In a mixing bowl, combine shredded cabbage, diced red onion, olive oil, lime juice, salt, and pepper to make the slaw. Toss well and set aside.
  2. Heat a non-stick skillet over medium heat. Add olive oil; once hot, add shrimp seasoned with Cajun seasoning. Cook for 2-3 minutes per side until pink and opaque.
  3. Warm corn tortillas in a separate skillet or microwave until soft.
  4. Assemble your tacos by placing cooked shrimp on each tortilla and topping with slaw, cilantro lime crema, avocado, pico de gallo, jalapeños, and any other desired toppings.
