  • 2 cooked and shredded chicken breasts
  • 3 cups shredded romaine lettuce
  • 1 cup shredded red cabbage
  • 1 cup grated carrots
  • 1 cup drained mandarin oranges
  • 4 chopped green onions
  • ¼ cup chopped cilantro
  • ⅓ cup sliced almonds
  • ½ cup olive oil
  • ¼ cup rice vinegar
  • 2 tablespoons light soy sauce
  • 2 tablespoons honey
  • 1 tablespoon sesame seeds
  • ½ teaspoon garlic powder
  • ½ teaspoon ground ginger

Instructions

  1. In a small bowl or jar, whisk together olive oil, rice vinegar, soy sauce, honey, sesame seeds, garlic powder, and ground ginger to create the dressing.
  2. Pour half of the dressing over the shredded chicken and toss until well coated.
  3. In a large mixing bowl, combine the shredded lettuce, cabbage, grated carrots, mandarin oranges, green onions, cilantro, and sliced almonds.
