  • 1 cup cooked white rice (jasmine or basmati)
  • 1 lb ground beef (or ground turkey/chicken)
  • 1 tbsp soy sauce
  • 1 tsp garlic powder
  • 1 tsp sesame oil or olive oil
  • Salt & pepper to taste
  • 1 cup broccoli florets
  • 1 cup zucchini, chopped
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, chopped
  • 1 cup sliced mushrooms
  • 1 tbsp soy sauce
  • 1 tsp olive oil
  • 1 tsp minced garlic

Instructions

  1. Cook the rice according to package instructions and keep warm.
  2. In a skillet over medium heat, add sesame oil and brown the ground beef. Stir in garlic powder and soy sauce; cook until caramelized.
  3. In another pan, heat olive oil over medium-high heat. Add minced garlic and all chopped vegetables; stir-fry for 5-7 minutes until tender-crisp. Drizzle with soy sauce and toss to coat.
  4. Assemble the bowl with rice, ground beef, and stir-fried veggies.
