  • 1 green bell pepper
  • 1 cup mashed potatoes (with butter and milk)
  • 1 cup sliced carrots
  • 1 cup green beans
  • 1 tsp olive oil
  • 1 tsp garlic powder
  • Salt & pepper to taste

Instructions

  1. In a non-stick skillet over medium-high heat, heat olive oil. Add beef strips and sliced green bell pepper; season with garlic powder, salt, and pepper. Cook until browned and tender, about 5-7 minutes.
  2. In a pot, boil peeled potatoes until fork-tender. Drain and mash with butter and milk until creamy; season with salt and pepper.
  3. Lightly steam or sauté sliced carrots and green beans in a steamer or sauté pan for about 3-5 minutes until just tender; season with salt and pepper.
  4. On a plate, layer creamy mashed potatoes first, then top with cooked beef strips and peppers alongside the steamed veggies.
