  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • Salt & pepper (to taste)
  • 2 tablespoons olive oil
  • 1/2 medium onion (chopped)
  • 1 can (10 ounces) Ro-tel diced tomatoes & green chilies (drained)
  • 1 can (14 ounces) black beans (drained & rinsed)
  • 1 can (12 ounces) corn (drained)
  • 1/2 teaspoon smoked paprika
  • 1 cup Mexican cheese blend
  • Fresh cilantro (chopped, optional)

Instructions

  1. Preheat the oven to 400°F.
  2. Cut chicken breasts in half lengthwise and season with garlic powder, chili powder, salt, and pepper.
  3. Heat olive oil in an oven-safe skillet over medium-high heat; sear chicken for about 3-4 minutes per side until golden. Remove from skillet.
  4. Sauté chopped onion in the same skillet until softened.
  5. Stir in Ro-tel tomatoes, black beans, corn, and smoked paprika; heat through for a few minutes.
  6. Return chicken to the pan and spoon mixture over each cutlet; top with cheese.
  7. Bake for 5-7 minutes until chicken reaches an internal temperature of 165°F and cheese is melted.
  8. Serve hot, garnished with fresh cilantro if desired.
