  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 3 carrots, peeled and sliced
  • 3 celery stalks, chopped
  • 3 medium potatoes, diced
  • 1 tbsp tomato paste
  • 4 cups beef broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 bay leaves
  • Salt and black pepper, to taste
  • 2 tbsp all-purpose flour, optional

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear the beef cubes until browned and remove from the pot.
  2. In the same pot, sauté onion, garlic, carrots, celery, and potatoes until softened.
  3. Return beef to the pot; add tomato paste, broth, herbs, salt, and pepper. Bring to a boil.
  4. Reduce heat and simmer for 1.5 to 2 hours until beef is tender. Add flour if desired for thickening during the last few minutes.
  5. Prepare crusty bread bowls by cutting off tops of round loaves and hollowing out insides.
  6. Serve hot stew in bread bowls.
