Roasted Plum and Burrata Salad is a vibrant and exquisite dish that beautifully marries creamy burrata cheese with the natural sweetness of roasted plums.   • 1 large burrata ball (or 2 small)
  • 45 ripe plums, halved and pitted
  • 1 cup unsalted pistachios, chopped
  • Olive oil
  • Salt
  • Fresh thyme leaves

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Arrange halved plums cut side up on a baking sheet. Drizzle with olive oil and sprinkle with salt.
  3. Roast the plums for about 20–25 minutes until tender and caramelized.
  4. While the plums roast, coarsely chop the unsalted pistachios.
  5. Once roasted, arrange the warm plums around the burrata on a serving plate. Sprinkle with chopped pistachios and garnish with fresh thyme leaves.
  6. Serve immediately or at room temperature.
