Scale
  • Cooking spray
  • 2/3 cup unsalted butter, at room temp
  • 1 1/2 cups packed light brown sugar
  • 1 cup white sugar
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon kosher salt
  • 3 large eggs
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 cup chocolate chips
  • 1/2 cup unsalted butter, melted
  • 1 cup white sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon vanilla extract
  • 1 Tablespoon red food coloring
  • 1/2 teaspoon white vinegar
  • 2 large eggs
  • 1/8 teaspoon kosher salt
  • 3/4 cup all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan or line it with parchment paper.
  2. Prepare the chocolate chip cookie layer by creaming together softened butter, light brown sugar, white sugar, and vanilla extract. Mix in eggs and salt, then gradually add flour and baking powder before folding in chocolate chips.
  3. In a separate bowl, melt unsalted butter for the red velvet brownie layer. Combine it with white sugar, cocoa powder, vanilla extract, red food coloring, white vinegar, eggs, salt, and flour until smooth.
  4. Spread the cookie batter evenly in the prepared pan before layering the brownie batter on top. Swirl lightly if desired.
  5. Bake for about 30 minutes or until a toothpick comes out clean. Allow cooling completely before cutting into squares.
