  • 6 tablespoons shortening or unsalted butter
  • 1 cup granulated sugar
  • 9 cups unbleached all-purpose flour
  • 2 cups hot water
  • 2 eggs (beaten)
  • 1 tablespoon salt
  • For the filling: 3 1/2 cups raspberries
  • Zest of 1 large lemon
  • 1/2 cup light brown sugar
  • 1/3 cup granulated sugar
  • 1 1/2 teaspoons cornstarch
  • For the frosting: 4 ounces cream cheese
  • 1/4 cup unsalted butter
  • 1 cup powdered sugar
  • 1 teaspoon lemon zest

Instructions

  1. Activate yeast in lukewarm water for five minutes.
  2. In a stand mixer, combine shortening, sugar, salt, and hot water; let cool to lukewarm.
  3. Mix in flour and yeast mixture; add beaten eggs.
  4. Gradually knead in remaining flour until smooth.
  5. Allow dough to rise in a greased bowl until doubled (about 30 minutes).
  6. Roll out half of the dough, spread with butter, and sprinkle with filling mixture.
  7. Roll up and cut into pieces; place in a greased baking pan.
  8. Let rise again until doubled (about an hour), then bake at 350°F for 25–32 minutes.
  9. Prepare frosting and spread on cooled rolls.
