  • 1 sheet of puff pastry
  • Fresh or frozen raspberries
  • 250 ml milk
  • 20 g cornstarch
  • 2 egg yolks
  • 50 g sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon butter

Instructions

  1. Preheat the oven to 190 degrees Celsius.
  2. In a saucepan, mix milk, cornstarch, egg yolks, sugar, and vanilla extract. Heat gently while stirring until thickened.
  3. Remove from heat and stir in butter. Allow to cool.
  4. Roll out the puff pastry on a floured surface and cut into eight rectangles.
  5. Place custard in the center of each rectangle and top with raspberries.
  6. Fold over and seal corners to enclose filling.
  7. Brush with an egg wash (whisked egg yolk with milk).
  8. Bake for about 15-20 minutes until golden brown.
  9. Cool slightly before serving; dust with powdered sugar if desired.
