  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill, chopped
  • 1/3 cup breadcrumbs
  • 1 large egg
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil (for cooking)
  • 2 cups baby spinach or mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, sliced
  • 1/4 cup red onion, chopped
  • 1/2 cup feta cheese, crumbled
  • 1 tbsp olive oil (for drizzling)
  • 1/2 lemon, juiced

Instructions

  1. In a mixing bowl, combine ground turkey, minced garlic, chopped onion, parsley, dill, breadcrumbs, egg, salt, and black pepper. Mix gently until combined.
  2. Shape the mixture into equal-sized meatballs.
  3. Heat olive oil in a skillet over medium heat. Cook meatballs for 10–12 minutes until browned on all sides.
  4. While the meatballs cook, prepare the fresh vegetables: slice cucumber, halve cherry tomatoes, chop red onion, and crumble feta cheese.
  5. To assemble your bowl, layer baby spinach or mixed greens in bowls. Top with sliced veggies and warm meatballs. Drizzle with olive oil and lemon juice before serving.
