  • 1 ½ cups rolled oats
  • 1 cup unsalted butter, melted
  • 1 cup packed brown sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups pumpkin puree
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish or line it with parchment paper.
  2. In a large bowl, mix together flour, oats, brown sugar, baking soda, and salt. Stir in melted butter until combined to form the crumble base.
  3. Press half of the crumble mixture into the prepared baking dish as the base layer.
  4. In another bowl, whisk together pumpkin puree, granulated sugar, brown sugar, eggs, pumpkin pie spice, and vanilla extract until smooth.
  5. Pour the pumpkin filling over the base layer and spread evenly.
  6. Sprinkle the remaining crumble mixture on top and add walnuts if desired.
  7. Bake for 30–35 minutes until golden brown and set. Cool completely before slicing.
