  • 4 tbsp unsalted butter, room temperature
  • 1 cup powdered sugar
  • 13 tsp milk, as needed

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
  2. In a bowl, whisk together flour, baking soda, cinnamon, and spices.
  3. In another bowl, mix oil and sugars until smooth. Add eggs one at a time. Mix in pumpkin puree and vanilla.
  4. Gradually combine dry ingredients with wet mixture until just mixed.
  5. Pour batter into the prepared pan and bake for about 55 minutes or until a toothpick comes out clean.
  6. Cool for 10 minutes in the pan before transferring to a cooling rack.
  7. For the frosting, beat cream cheese and butter until creamy; mix in powdered sugar and adjust with milk as needed.
