  • 2 octopuses (about 500g each)
  • Fresh parsley
  • Bay leaf
  • Garlic
  • Extra virgin olive oil
  • Fresh lemon juice
  • Capers
  • Diced olives
  • Sweet chili flakes

Instructions

  1. Clean the octopus by removing the beak and eyes. Rinse thoroughly.
  2. Boil water with parsley and bay leaf; dip tentacles of octopus several times in boiling water.
  3. Fully immerse the octopus and simmer on low heat for 40 minutes until tender. Let cool in cooking water.
  4. Drain, dry, and cut the octopus into pieces.
  5. Marinate with chopped garlic, pepper, and olive oil for at least one hour.
  6. Prepare sauce by mixing lemon zest, capers, olives, and emulsified olive oil with lemon juice.
  7. Grill octopus pieces until charred on both sides (about 3 minutes).
  8. Serve drizzled with sauce and optional chili flakes.
