  • 3/4 cup water
  • 1/2 cup liquid glucose/light corn syrup
  • Few drops black gel food coloring
  • 6 Granny Smith apples (or 12 small apples)

Instructions

  1. Prepare by greasing baking paper on a tray and inserting bamboo skewers into each apple.
  2. In a saucepan, mix sugar, water, glucose, and food coloring over medium heat until dissolved. Wash down sides with a wet pastry brush.
  3. Cook until reaching hard crack stage (150ºC/310ºF).
  4. Dip each apple into the caramel mixture, swirling for even coating.
  5. Place dipped apples on the prepared tray and allow cooling completely.
