  • 200 ml apple vinegar
  • 2 tbsp brown sugar
  • Zest of one orange
  • 1 cinnamon stick
  • 2 whole cloves
  • 1 wheel brie (200250 g)
  • 1 sheet puff pastry (thawed)
  • 1 egg (beaten for egg wash)

Instructions

  1. In a pot, mix apple vinegar, brown sugar, orange zest, cinnamon stick, and cloves. Submerge the pear and simmer for 20-25 minutes until tender. Let cool in the liquid.
  2. Slice brie horizontally into halves. Position the poached pear upright on the bottom half and cover with the top half.
  3. Roll out thawed puff pastry and wrap it around the brie and pear. Seal edges tightly.
  4. Place seam-side down on a baking sheet. Brush with egg wash and bake at 200°C (392°F) for 20-25 minutes until golden brown. Rest for 5 minutes before serving.
