  • 1 1/2 cups milk
  • 1/2 cup heavy cream
  • 1/4 cup chopped pistachios

Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line a 9×13-inch baking pan.
  2. In a mixing bowl, cream together softened butter and granulated sugar until fluffy. Add the egg and vanilla extract, mixing until combined.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually mix this dry blend into the wet ingredients until just combined.
  4. Press the dough evenly into the prepared pan and bake for 12–15 minutes or until lightly golden at the edges. Allow cooling completely.
  5. In another bowl, whisk together the instant pistachio pudding mix, milk, and heavy cream. Refrigerate for 5–10 minutes to thicken.
  6. Once the cookie base is cool, spread the pistachio pudding layer evenly on top and garnish with chopped pistachios.
  7. Chill in the refrigerator for at least 2 hours before cutting into squares.
