Ingredients

Scale
  • 4 boneless skinless chicken breast halves (4 ounces each)
  • 2 cans (8 ounces each) unsweetened pineapple chunks
  • 1 tablespoon honey
  • 1 tablespoon reduced-sodium teriyaki sauce or soy sauce
  • 1 tablespoon canola oil
  • 1 teaspoon cornstarch
  • 1 tablespoon all-purpose flour

Instructions

  1. Pound the chicken breasts to about 1/4 inch thick and coat them lightly with flour.
  2. Heat canola oil in a skillet over medium heat. Cook the chicken for 3-5 minutes per side until golden brown and cooked through; transfer to a plate.
  3. Drain pineapple but reserve 1/4 cup juice. In a bowl, mix cornstarch with reserved juice until smooth.
  4. In the skillet, combine honey, teriyaki sauce, and pepper; stir until thickened.
  5. Add pineapple chunks and chicken back into the skillet, stirring to coat evenly in the sauce and heating through for 2-3 minutes.
