- 3 tablespoons cornstarch
- 3 tablespoons olive oil
- 2 (8 ounce) cans pineapple tidbits (drained)
- 1/2 red bell pepper
- 1/2 medium onion
- 3/4 cup pineapple juice
- 3 tablespoons honey
- 2 tablespoons soy sauce
- 1 teaspoon rice vinegar
- 1 teaspoon grated fresh ginger
- 2 cloves garlic (minced)
- 1 tablespoon cornstarch
- Prepare the sauce by whisking together pineapple juice, honey, soy sauce, rice vinegar, ginger, garlic, and cornstarch in a bowl until smooth.
- Cut chicken into pieces, toss with garlic powder, pepper, and cornstarch until coated.
- Heat olive oil in a deep skillet over medium-high heat. Cook chicken in batches until browned and cooked through; transfer to a plate.
- In the same skillet, sauté the drained pineapple for one minute before adding bell pepper and onion; cook until tender-crisp.
- Return chicken to the skillet and stir in the sauce; cook until thickened.
