  • 3 tablespoons cornstarch
  • 3 tablespoons olive oil
  • 2 (8 ounce) cans pineapple tidbits (drained)
  • 1/2 red bell pepper
  • 1/2 medium onion
  • 3/4 cup pineapple juice
  • 3 tablespoons honey
  • 2 tablespoons soy sauce
  • 1 teaspoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic (minced)
  • 1 tablespoon cornstarch

Instructions

  1. Prepare the sauce by whisking together pineapple juice, honey, soy sauce, rice vinegar, ginger, garlic, and cornstarch in a bowl until smooth.
  2. Cut chicken into pieces, toss with garlic powder, pepper, and cornstarch until coated.
  3. Heat olive oil in a deep skillet over medium-high heat. Cook chicken in batches until browned and cooked through; transfer to a plate.
  4. In the same skillet, sauté the drained pineapple for one minute before adding bell pepper and onion; cook until tender-crisp.
  5. Return chicken to the skillet and stir in the sauce; cook until thickened.
  6. Serve immediately over rice or noodles.
