  • 1 pound chicken breast, cut into cubes
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup pineapple, cut into cubes
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Green onions and sesame seeds for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chicken cubes, seasoning with salt and pepper. Cook until golden brown and cooked through; remove from skillet.
  2. In the same skillet, sauté onion, garlic, and bell pepper until softened. Stir in pineapple chunks and cook for an additional 2 minutes.
  3. Add jasmine rice, chicken broth, soy sauce, ginger, salt, and pepper to the skillet. Bring to a boil.
  4. Lower heat to simmer, cover, and cook for 18–20 minutes until rice is tender.
  5. Return cooked chicken to the skillet, mixing well to combine all ingredients. Heat through before serving.
  6. Garnish with sliced green onions and sesame seeds.
