  • 2 cups white rice
  • 1 cup fresh pineapple chunks
  • 1 bell pepper, diced
  • 1 cup snap peas or snow peas
  • ¼ cup soy sauce
  • ¼ cup chicken broth
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 onion, diced
  • 1 tsp ginger, grated
  • Salt and pepper, to taste

  • Sesame seeds, for garnish (optional)

Instructions

  1. Rinse the rice under cold water until clear.
  2. In a medium pot, combine rinsed rice with 4 cups of water. Bring to a boil, then cover and simmer for about 15-20 minutes until fluffy.
  3. Heat olive oil in a large skillet over medium-high heat. Sauté diced onion and minced garlic until translucent (about 2-3 minutes).
  4. Add cubed chicken to skillet; cook until golden brown (5-7 minutes).
  5. Stir in diced bell pepper and snap peas; cook for an additional 3-4 minutes.
  6. In a small bowl, whisk soy sauce, chicken broth, honey (if using), and ginger; pour into skillet along with pineapple chunks. Cook for another 2-3 minutes until thickened.
