  • 3 green onions (finely chopped)
  • 3 cloves garlic (minced)
  • 1 tablespoon vegetable oil
  • 3 tablespoons soy sauce
  • 1/2 cup frozen peas
  • 1/2 cup carrots (diced)
  • 2 tablespoons vegetable oil
  • 1 tablespoon sesame oil
  • 1/2 teaspoon salt
  • 1 teaspoon cornstarch
  • 1 tablespoon fresh ginger (minced)
  • 2 tablespoons corn kernels
  • 1 tablespoon apple vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon white pepper
  • 1 tablespoon fresh cilantro
  • Sesame seeds for sprinkling
  • 1/2 cup char siu beef (diced)
  • 1/2 cup cooked shrimp

Instructions

  1. Prepare day-old rice by ensuring it's separated and at room temperature.
  2. Beat eggs with salt and cornstarch. Heat the wok until smoking, add oil, and scramble eggs until just set. Remove and set aside.
  3. Clean the wok, heat it again, add vegetable oil, garlic, and ginger; stir-fry for 10 seconds.
  4. Add rice, breaking clumps while stir-frying for 2-3 minutes until heated.
  5. Add carrots, then peas and corn; mix thoroughly.
  6. Drizzle apple vinegar around the edges of the wok; add soy sauces evenly over rice and toss well.
  7. Return scrambled eggs to the wok; season with white pepper and sugar before tossing everything together for another 30 seconds.
