  • 250g chicken breast fillet
  • 1 red capsicum
  • 1 green capsicum
  • 1 medium onion
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp crushed chili flakes
  • 1 tsp ground black pepper
  • 1 tsp minced garlic
  • 1 cup basmati rice
  • 2 cups water
  • A pinch of salt
  • 1 tbsp cooking oil (vegetable or sesame)

Instructions

  1. Rinse basmati rice under cold water until clear. Combine in a pot with 2 cups water and a pinch of salt. Bring to boil, reduce heat, cover, and simmer until fluffy.
  2. Heat oil in a wok over medium-high heat. Sauté minced garlic briefly before adding diced chicken; cook until golden brown.
  3. Add chopped onion, red, and green capsicum; stir-fry for 2-3 minutes.
  4. Stir in soy sauce, oyster sauce, chili flakes, and black pepper; mix well and cook for another minute.
  5. Serve the stir-fry over warm fluffy rice.
