Ingredients

Scale
  • 2.0 to 2.3 pounds fresh oranges (about 4 medium)
  • 1 lemon (zest and juice)
  • 1/3 cup water
  • 4 cups granulated sugar

Instructions

  1. Thoroughly wash the oranges and lemon, scrubbing the peels.
  2. Cut off the ends of each orange, slice them in half, and then cut each half into four pieces, discarding any seeds.
  3. Place the chopped oranges in a food processor and pulse until finely chopped.
  4. In a large saucepan over medium heat, combine the pureed oranges with lemon zest, lemon juice, water, and sugar. Stir well.
  5. Bring to a boil, then reduce heat to maintain a low boil for about 30-35 minutes until thickened.
  6. Test doneness using the cold plate method: it should slide off a spoon in sheets.
  7. Pour hot marmalade into jars; cool before sealing. Store in the refrigerator for up to two weeks or freeze for three months.
