  • 1 cup boiling water
  • 1 tsp baking soda
  • 1/2 cup unsalted butter, softened
  • 3/4 cup light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • Zest of 2 oranges
  • 1/2 cup fresh orange juice
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp ground cardamom
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8-inch cake tin.
  2. In a bowl, whisk together flour, baking powder, ground cardamom, and salt; set aside.
  3. In another bowl, cream together softened butter and light brown sugar until fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract, orange zest, and fresh orange juice.
  4. Fold in chopped dates into the wet mixture.
  5. Gradually add dry ingredients to the wet mixture; mix until just combined.
  6. Pour batter into the prepared tin and bake for 40–45 minutes or until a toothpick comes out clean.
  7. For the honey drizzle, warm honey with fresh orange juice on low heat while the cake bakes.
  8. Drizzle over the warm cake once baked; let cool before slicing.
