  • 1 carrot (julienned)
  • 3 cloves garlic (minced)
  • 2 mild sausages (chicken or turkey, casings removed)
  • 1/2 can red kidney beans
  • 1/2 can white beans
  • 4 cups broth (chicken or vegetable)
  • 15 oz diced tomatoes
  • 15 oz tomato sauce
  • 2 TBSP ketchup
  • 1/2 tsp dried basil
  • 1/4 tsp celery seed
  • 1/2 tsp sugar
  • Salt and pepper to taste
  • 1/3 cup Ditalini pasta

Instructions

  1. Prepare your ingredients: dice the onion, julienne the carrot, and mince the garlic.
  2. In a large pot over medium heat, sauté the onion in a splash of oil until translucent. Add garlic and carrots; cook until fragrant.
  3. Add mild sausage to the pot, breaking it apart as it browns.
  4. Pour in broth, diced tomatoes, tomato sauce, and ketchup. Stir in both types of beans along with dried basil, celery seed, sugar, salt, and pepper.
  5. Bring to a gentle boil; stir in Ditalini pasta. Reduce heat to low; cover and simmer for about 20 minutes until pasta is tender.
  6. Taste for seasoning adjustments before serving hot.
