  • 1 red bell pepper, chopped

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 teaspoon smoked paprika
  • ½ teaspoon turmeric
  • Salt and black pepper to taste
  • Fresh cilantro or parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté the sliced onion and minced garlic until soft.
