  • 2 garlic cloves (minced)
  • ½ red bell pepper (diced)
  • 1 small jalapeno (seeded and finely diced)
  • 1 cup long grain white rice
  • ½ teaspoon cumin
  • kosher salt (to taste)
  • 8 ounces tomato sauce
  • 1 cup vegetable or chicken broth
  • Finely chopped cilantro for garnish

Instructions

  1. Wash the rice in a fine mesh sieve to remove excess starch.
  2. In a large saucepan, heat olive oil over medium-high heat. Sauté diced onion, minced garlic, red bell pepper, and jalapeno for 1-2 minutes until the onion is translucent.
  3. Add the washed rice and toast until lightly golden (about 2 minutes).
  4. Stir in cumin, salt, tomato sauce, and broth until well combined.
  5. Bring to a boil; then cover and simmer on low for about 15 minutes until the rice is cooked.
  6. Fluff with a fork before serving and garnish with chopped cilantro if desired.
