  • 5 ancho peppers (stems and seeds removed)
  • 5 guajillo peppers (stems and seeds removed)
  • 23 chiles de arbol (optional, for spicier)
  • 1 tablespoon olive oil
  • 1 large white onion (chopped)
  • 3 large tomatoes (chopped)
  • 5 cloves garlic (chopped)
  • 1 tablespoon dried Mexican oregano
  • 1 tablespoon sea salt (or to taste)
  • 1 teaspoon cinnamon
  • 1 teaspoon cumin
  • 1 teaspoon ground ginger
  • 1 teaspoon black pepper
  • ½ cup apple cider vinegar
  • 2 large roasted tomatoes (chopped)
  • 4 cups beef stock (separated)
  • 3.5 pound lamb shoulder (or beef shank or chuck roast)

Instructions

  1. Toast the peppers in a large pan over medium heat for about 2 minutes on each side until slightly darkened.
  2. Transfer the toasted peppers to a bowl, cover with hot water, and let them hydrate for 20 minutes.
  3. In the same pan, heat olive oil and sauté chopped onion and tomatoes for around 5 minutes until softened.
  4. In a food processor, blend the cooked vegetables with softened chilies (reserve soaking liquid), garlic, seasonings, apple cider vinegar, and one cup of beef stock until smooth.
  5. Cut lamb into chunks, marinate it with the blended sauce in the refrigerator for at least two hours or overnight.
  6. In a large pot, combine marinated meat with chopped roasted tomatoes and remaining beef stock; cover and cook on medium heat for approximately three hours until fork-tender.
