  • 1 eggplant, cubed
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 red onion, sliced
  • 1 cup cherry tomatoes
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1/2 cup crumbled feta cheese (optional)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  2. In a large mixing bowl, combine the sliced zucchini, cubed eggplant, chopped bell peppers, sliced onion, and cherry tomatoes.
  3. Drizzle with olive oil and add minced garlic, oregano, thyme, basil, salt, and pepper. Toss until well-coated.
  4. Spread the vegetable mixture evenly on the baking sheet and roast for 25–30 minutes until tender and slightly caramelized. Stir halfway through cooking for even results.
