  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • ½ cucumber, diced
  • ¼ red onion, thinly sliced
  • ½ cup feta cheese, crumbled
  • ½ cup tzatziki sauce
  • Fresh parsley, for garnish

Instructions

  1. Marinate the chicken by mixing olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper in a bowl. Coat the chicken breasts well and let marinate for at least 30 minutes.
  2. Heat a skillet over medium heat. Cook the marinated chicken for about 5–6 minutes on each side until golden brown and cooked through. Let rest before slicing.
  3. To assemble the bowls, divide cooked rice or quinoa between serving bowls. Top with sliced chicken, halved cherry tomatoes, diced cucumber, thinly sliced red onion, crumbled feta cheese, and tzatziki sauce.
  4. Garnish with fresh parsley and serve immediately.
