  • 4 whole fish fillets (snapper or cod)
  • 2 tablespoons olive oil
  • 1 lemon (zested and juiced)
  • 3 cloves garlic (minced)
  • 1 onion (sliced)
  • 1 bell pepper (sliced)
  • 1 zucchini (sliced)
  • 1 cup cherry tomatoes (halved)
  • Fresh parsley (chopped)
  • Fresh dill (chopped)
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Grease a baking dish with olive oil.
  3. Season fish fillets with salt, pepper, and oregano.
  4. In a skillet, heat olive oil over medium heat; sauté onions until translucent.
  5. Add bell pepper and zucchini; cook until just tender. Stir in garlic for one minute.
  6. Spread sautéed vegetables in the baking dish; place fish fillets on top.
  7. Scatter cherry tomatoes, parsley, dill, lemon juice, and zest over fish.
  8. Cover with foil and bake for 20 minutes; remove foil and bake for another 5-10 minutes until fish flakes easily.
  9. Let cool slightly before serving.
