  • 1 slice whole grain or sourdough bread
  • ripe avocado
  • 2 soft-boiled eggs
  • 2 thick tomato slices
  • 1 cup cucumber slices
  • 1 cup feta cheese, cubed
  • 46 olives (Kalamata and green)
  • 1 tsp olive oil
  • Fresh parsley or cilantro, chopped
  • Salt and black pepper to taste

Instructions

  1. Toast the bread until golden brown. While toasting, mash the avocado with salt.
  2. Boil the eggs in a pot of water for 7 minutes for soft-boiled perfection. Transfer to ice water to cool, then peel and halve.
  3. Assemble your plate: spread mashed avocado on toast, top with tomato slices, cucumber, feta, olives, and halved eggs.
  4. Drizzle olive oil over everything, season with herbs, salt, and pepper.
