  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 (15-ounce) can cannellini beans, rinsed and drained
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup ditalini pasta
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion, diced carrots, and celery. Sauté until softened, about 5-7 minutes. Stir in minced garlic and cook for an additional minute.
  2. Add rinsed cannellini beans, undrained diced tomatoes, chicken broth, oregano, basil, and red pepper flakes (if using). Bring to a simmer.
  3. Lower the heat and let the soup simmer for 20 minutes to meld flavors.
  4. Stir in ditalini pasta and cook until tender, about 10-12 minutes.
