  • 1 1/2 cups graham cracker crumbs
  • 3 (8-ounce) packages cream cheese
  • 1 cup granulated sugar
  • 1/2 cup sour cream
  • 1/4 cup heavy cream
  • 3 large eggs
  • Zest of 1 lemon and 1 lime
  • 1/4 cup fresh lemon juice
  • 1/4 cup fresh lime juice
  • Cherry pie filling for topping
  • Chopped pistachios for garnish

Instructions

  1. Preheat your oven to 325°F (163°C) and lightly grease a 9-inch springform pan.
  2. To make the crust, mix graham cracker crumbs with sugar and melted butter. Press into the bottom of the pan and bake for 8 minutes. Let cool.
  3. In a mixing bowl, beat softened cream cheese until smooth. Gradually add sugar, then mix in sour cream and heavy cream until combined.
  4. Add eggs one at a time, mixing well after each addition. Stir in lemon zest, lime zest, lemon juice, lime juice, and vanilla extract.
  5. Pour the filling over the cooled crust and smooth the top with a spatula.
  6. Bake for 50–60 minutes until set; let cool in the oven with the door slightly ajar for about an hour.
  7. Refrigerate for at least 4 hours or overnight before serving. Top with cherry pie filling and sprinkle with pistachios.
