  • 12 organic lemons
  • 1 litre high-proof white grape juice (as an alcohol substitute)
  • 1 ½ litres water
  • 3 ¼ cups granulated sugar

Instructions

  1. Thoroughly wash and dry the lemons.
  2. Use a vegetable peeler to gently remove the lemon peels, avoiding excessive pith.
  3. Place the lemon peels in a large glass jar and pour in the white grape juice. Seal tightly and let it infuse in a cool, dark place for 30 days, shaking gently every few days.
  4. After 30 days, prepare simple syrup by heating water and dissolving sugar until cooled.
  5. Strain the infused mixture using a sieve lined with coffee filter or cheesecloth into a bowl.
  6. Combine the simple syrup with the strained infusion and stir well.
  7. Use a funnel to transfer to bottles, seal tightly, and let rest for another 30 days before serving.
