  • 1 small yellow onion, finely diced
  • 3 garlic cloves, minced
  • 2 ½ cups low-sodium chicken broth (or vegetable broth for vegetarian)
  • Zest of 1 lemon
  • Juice of 1 lemon (about 23 tablespoons)
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 2 tablespoons chopped fresh parsley (optional for garnish)

Instructions

  1. Heat olive oil in a medium saucepan over medium heat. Add the finely diced onion and sauté for 2 to 3 minutes until softened. Stir in the minced garlic and cook for another 30 seconds until fragrant.
  2. Add the rice to the pot, stirring well to coat it with the oil and aromatics. Toast the rice for about 1 minute.
  3. Pour in the chicken or vegetable broth, lemon juice, lemon zest, oregano, salt, and pepper. Bring to a gentle boil.
  4. Reduce heat to low and cover tightly. Simmer for about 18 to 20 minutes until the liquid is absorbed and rice is tender.
  5. Remove from heat and let sit covered for an additional 5 minutes. Fluff with a fork and adjust seasoning if needed before serving.
