  • ¼ cup granulated sugar (plus extra for brûlée)
  • 1 lemons (zested)
  • 3 tbsp fresh lemon juice
  • 1 tsp vanilla extract

Instructions

  1. Prepare the lemons by rinsing them, then slicing in half and scooping out the flesh.
  2. Squeeze the juice from the lemon halves, straining to remove seeds and pulp.
  3. In a saucepan, combine heavy cream, sugar, and lemon zest over medium-low heat until sugar dissolves and the mixture thickens slightly.
  4. Remove from heat, stir in lemon juice and vanilla extract, then strain through a sieve for smoothness.
  5. Chill the mixture in the hollowed lemon halves for at least 1-2 hours or overnight.
  6. Just before serving, sprinkle sugar on top and use a blowtorch to caramelize until golden.
