  • 1 large egg
  • 1 ½ cups powdered sugar, sifted
  • 2 to 3 tbsp fresh lemon juice
  • 1/2 tsp lavender extract (optional)
  • 3 to 4 drops of purple food coloring

Instructions

  1. Preheat your oven to 350°F (180°C) and line two baking sheets with parchment paper.
  2. In a small bowl, whisk together all-purpose flour, cornstarch, and baking powder; set aside.
  3. In a large mixing bowl, cream together salted butter and granulated sugar until light and fluffy. Add lemon zest and culinary lavender buds.
  4. Mix in the egg until fully incorporated.
  5. Gradually add the dry mixture on low speed until just combined.
  6. Scoop tablespoon-sized balls onto prepared baking sheets, flatten them gently, and space them apart.
  7. Bake for 12 to 15 minutes until edges are golden brown.
  8. Cool on baking sheets before transferring to wire racks.
