  • Salt & black pepper
  • 1 carrot
  • 1 zucchini
  • 2 garlic cloves
  • 1 tbsp butter (or olive oil)
  • Fresh parsley or dill
  • Juice of 1 lemon

Instructions

  1. Heat half the butter in a skillet over medium heat. Add garlic, carrots, and zucchini; sauté for 6-8 minutes until tender. Season with salt and pepper; set aside.
  2. Season the fish fillet with salt and pepper. In the same skillet, melt the remaining butter and sear the fish on medium-high heat for 3-4 minutes per side until golden and flaky. Add lemon juice during the last 30 seconds.
  3. Plate the fish alongside sautéed vegetables, spooning any pan sauce over the top. Garnish with fresh herbs before serving.
