  • 1 tablespoon lemon zest
  • 2/3 cup lemon juice (about 45 lemons)
  • 4 large eggs
  • 2 cups sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. For the shortbread crust: Cream together butter and powdered sugar until light and fluffy. Gradually mix in flour and salt until combined. Press into a greased 9×13 inch baking pan and bake for about 15 minutes, or until lightly golden.

  4. Bake again for an additional 30 minutes, until the filling is set but slightly jiggles in the center.
