  • 1 bunch green onions
  • 1 garlic clove
  • Fresh ginger (or ground ginger)
  • Soy sauce
  • Rice vinegar
  • Brown sugar
  • Ground beef
  • Toasted sesame oil
  • Baby bok choy
  • Wonton wrappers

Instructions

  1. In a large saucepan, heat chicken stock over medium-high heat.
  2. Add chopped green onion whites, sliced garlic, and ginger to the broth. Stir in soy sauce, vinegar, brown sugar, and salt. Bring to a boil.
  3. In a mixing bowl, combine ground beef with sliced green onion tops, grated ginger, soy sauce, sesame oil, cornstarch, and salt. Mix well.
  4. Form the beef mixture into meatballs or drop spoonfuls directly into the simmering broth.
  5. After 5 minutes of simmering, add quartered wonton wrappers and chopped bok choy to the pot. Cook for an additional 8 minutes.
  6. Serve hot and garnish with reserved green onions.
