  • 2 large eggs
  • 1 cup mixed salad greens
  • Chopped zucchini
  • Cup broccoli florets
  • 1 tsp olive oil
  • Salt & black pepper to taste
  • Avocado
  • 1 tsp everything bagel seasoning

Instructions

  1. Boil eggs in water for 7 minutes; transfer to an ice bath to cool before peeling.
  2. Preheat oven to 425F (220C). Toss zucchini and broccoli with olive oil, salt, and pepper on a baking sheet; roast for 15-18 minutes until golden.
  3. In a serving bowl, layer mixed greens, roasted veggies, halved boiled eggs, and sliced avocado.
  4. Sprinkle everything bagel seasoning over avocado and serve immediately.
