  • 1 medium onion, diced
  • 1 large carrot, diced
  • 3 cloves garlic, minced
  • 1 large zucchini, diced
  • 15 oz black or white beans, drained and rinsed
  • 6 cups chicken broth
  • 28 oz diced tomatoes
  • 3/4 cup ditalini pasta
  • Seasonings: sea salt, black pepper, basil, oregano

Instructions

  1. In a large Dutch oven, heat olive oil over medium heat. Brown the chicken sausage for about 5–7 minutes until cooked through.
  2. Add the onion, carrot, zucchini, and garlic. Season with salt and pepper and sauté for about 10 minutes until vegetables soften.
  3. Pour in chicken broth and diced tomatoes. Stir in beans, basil, and oregano; bring to a boil.
  4. Add ditalini pasta to the boiling soup, reduce heat to medium, and simmer for about 15 minutes until pasta is tender.
