Ingredients

  • Carrots
  • Olive oil
  • Honey
  • Rose harissa paste
  • Feta cheese
  • Greek yogurt
  • Drained cooked chickpeas
  • Lemon juice
  • Cinnamon
  • Salt
  • Black pepper

Instructions

  1. Preheat your oven to 190°C (375°F).
  2. Trim the tops off the carrots, place them on a roasting tray, drizzle with olive oil, and season with cinnamon, salt, and pepper. Roast for 30 minutes until tender.
  3. While the carrots roast, prepare the whipped feta by whisking together crumbled feta and Greek yogurt until smooth. Season to taste.
  4. Drain cooked chickpeas and add them to the roasting tray after 30 minutes. Continue roasting for an additional 15 minutes until crispy.
  5. Mix honey and rose harissa in a bowl to create a glaze. Drizzle this over the roasted carrots and chickpeas before serving.
  6. Serve warm by spooning whipped feta onto a plate and topping with the roasted mixture.
