Ingredients

Scale
  • 1 pound fresh carrots
  • 1 pound fresh green beans
  • 2 tablespoons unsalted butter (or olive oil)
  • 3 tablespoons honey
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • Optional: Fresh parsley for garnish

Instructions

  1. Wash and trim the vegetables. Peel the carrots and cut them into uniform pieces; snap off the stem ends of the green beans.
  2. (Optional) Blanch the green beans in boiling salted water for 2-3 minutes, then transfer to an ice bath.
  3. In a large skillet over medium heat, melt the butter. Add carrots and sauté for about 5-7 minutes until slightly softened.
  4. Add green beans along with honey, soy sauce, apple cider vinegar, garlic powder, salt, and black pepper. Stir well to coat vegetables.
  5. Reduce heat to medium-low, cover, and simmer for about 8-10 minutes until tender-crisp.
  6. (Optional) Uncover and increase heat slightly for an additional 2-3 minutes to thicken the glaze.
  7. Taste and adjust seasoning if necessary before serving warm. Garnish with fresh parsley if desired.
