  • 1/2 cup unsalted sweet cream butter (softened)
  • 1 cup light brown sugar
  • 1 cup smooth peanut butter
  • 1 large egg
  • 1/4 cup unsalted sweet cream butter (for filling)
  • 1/2 cup smooth peanut butter (for filling)
  • 1 1/2 cups powdered sugar
  • 2 tablespoons whole milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In one bowl, mix flour, baking soda, and salt; set aside. In another bowl, combine softened butter, brown sugar, and peanut butter until creamy. Add the egg and vanilla extract; mix well. Gradually combine dry ingredients into wet mixture.
  3. Shape dough into small balls (about 24). Roll in sugar before placing on parchment-lined baking sheet.
  4. Bake for approximately 10 minutes until lightly golden. Cool on a wire rack.
  5. For the filling, beat together softened butter, peanut butter, powdered sugar, milk, and vanilla until fluffy. Once cookies are cool, spread filling on half and sandwich with another cookie.
